These peach paleo pancakes are made with a clean mix and real fresh peaches. They are the perfect combination of fluffy, fruit, and healthy and will make going out for brunch a thing of the past.
I love pancakes. But want to know something crazy? I probably went six years without touching one. This is while I was struggling with disordered eating. Finding food freedom and letting myself have those foods that used to be “off limits” was such a life changing experience for me. And now I love helping others overcome the same. If you are struggling with your relationship food, be sure to check out my health coaching and sign up for a free consultation. I’d love to help!
But now I LOVE making all sorts of pancakes! And while I have overcome my disordered habits I still like fueling my body with healthy foods that taste great. So that is what I make! If you love pancakes (or waffles) as much as I do be sure to check out my TWO ingredient banana pancakes, or my spicy savory waffles – and of course you’re going to want to make this recipe too! Especially if you love peaches!
This recipe is made both easy AND paleo thanks to Birch Bender’s banana paleo pancake mix. All you have to do is add a little water and you have pancakes! But of course I had to make it a little more fun 🙂 so I added a peach puree to give it an extra summery pop! But this is no artifical peach flavored puree. I actually just take a peach, skin it, and puree it in my food processor! Can’t get more fresh than that.
This recipe made about five small/medium pancakes for me (the size you can see better in the photos). I’d say this can serve two people if you have something on the side, serve one person with a couple leftover, or just double the recipe and have yourself a pancake date!
And while I love a good maple syrup (the real kind like this, not all the fake stuff stores sell!), I also love topping my pancakes with different things. I love a good nut butter like I used on these to get some healthy fats, or another great idea is to top it with yogurt! I personally recommend Lavva.
If you need something to pair with I highly suggest my egg muffins, egg wraps filled with whatever you please, or just go all out sweet with my cold brew donuts!
