But seriously yall the egg mcmuffin is a thing of the past. Why settle for fast “food” when you can make the same thing at home HEALTHIER, CHEAPER, and FASTER?! And you can meal prep it so make it when you have time and just pop it in the microwave when you want to eat it!
These healthy breakfast sandwiches are going to be a life saver for you – they have been for me!

Let’s Make a Healthy Breakfast Sandwich!
Even if you are prepping them, they are the world’s fastest meal prep. They really only take like five minutes to make – all you need to do is cook the eggs!
I made my egg patty by scrambling two eggs in a small bowl and then pouring them into my Lodge Cast Iron mini skillet (3.5 inches). If you don’t have one of those feel free to get creative! You could make sliders by baking the eggs in a muffin tin, use a pancake mold, whatever works!
Once you have your egg cooked seriously all you do is put it on a bun, top it with a slice of cheese, finish putting the bun on, and eat! If you are keeping these as prep, I do suggest letting them cool before wrapping them and putting them in the freezer. But you can always set them aside while you do something else!

These Healthy Breakfast Sandwiches are perfect for a quick and easy meal prep breakfast. They take minutes to make, only require three ingredients, and can be stored in the freezer for months. Heat them up when you’re ready to eat and you’ve got breakfast in under a minute!
Ingredients
- Hamburger bun ( I like using Whole Grain and/or Sprouted for extra nutrients)
- 2 eggs (try to buy pasture raised whenever possible!)
- 1 slice of cheese (OR vegan cheese if dairy free)
- Optional: Everything But the Bagel Seasoning (if you don’t own this yet, you NEED IT – get it here!)
- Optional: salt and pepper
Instructions
Making:
- Whisk together eggs and spices in a small mixing bowl.
- Bake in a small cast iron skillet (like this one) to make round shape egg patty.
- Once cooked through, place on bun and top with cheese.
- If prepping as a freezer meal, let cool before wrapping in saran wrap and placing in freezer.
- Store in freezer up to two months!
Re-Heating:
- Remove from freezer, take off saran wrap, and then wrap in a paper towel and microwave for one minute. Check to see if it is hot all the way through, microwave additional in ten second intervals.
Notes
Gluten Free Option – I love Mikey’s english muffins and think they would work great for this – especially considering they are already frozen!
Dairy Free Option – use vegan cheese. I recommend Daiya, Miyokos, or Kite Hill.
