Flourless Chocolate Chip Pumpkin Bars

Chocolate Chip Pumpkin Bars are flourless, gluten free, dairy free, and refined sugar free but are SUPER fudgy, incredibly flavorful, and the perfect guilt free dessert!

Pumpkin season never ends!  Or it shouldn’t, at least I think so?  Are you with me?  Well out of season or not these FLOURLESS chocolate chip pumpkin bars are amazing and I wasn’t about to wait until fall for it to be socially acceptable to share them.  I had almost an entire can of pumpkin left in my fridge after making a batch of my sweet potato protein waffles (except I used pumpkin this time) and I couldn’t just let it go to waste. And what better to do with it than make a quick and easy guilt free dessert?? 

Nothing.  That is the answer.  Unless maybe you have already made three batches of this and are a little “pumpkin bar-ed” out.  Then if that is the case I will forgive you and I recommend trying my pumpkin bread which is great and a little less sweet than these bars, or go completely savory with my  pumpkin hummus, can’t go wrong with either!

Let’s Make Chocolate Chip Pumpkin Bars!

This recipe is super simple you just take all your ingredients and stir in a big bowl!  Can’t really complain about that prep.  I haven’t tried this recipe with anything besides the tahini and I love the flavor and texture of these so much I’d recommend sticking to that if you can – but if you don’t have any and don’t want to go buy it you could try subbing a drippy nut butter.

Now let’s talk frosting.  In the photographed bars I cheated a little bit and used Simple Mills chocolate frosting.  It is pretty darn good, but honestly I like my homemade ones better 🙂  and my recipes are refined sugar free and made with veggies!  So if you are willing to take the extra step to make your own frosting I suggest my sweet potato chocolate buttercream frosting, my 5 ingredient healthy chocolate frosting, or even switch it up a little and try my nut butter coconut cream frosting or my coffee protein frosting!

In addition to the listed ingredients, you will need:

  • a large mixing bowl
  • an 8×8 pan
  • oil to grease your pan or parchment paper

Description

These flourless chocolate chip pumpkin bars are easy to make and they’re actually secretly healthy! Try these for a tasty afternoon snack.


Ingredients

Scale

Bars:

  • 1 1/4 cup pumpkin pureè
  • 2 tablespoons tahini
  • 2 eggs
  • 2 tablespoons maple syrup
  • 1/2 teaspoon pumpkin spice
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • chocolate chips

Frosting Options:


Instructions

  1. Preheat oven to 375F.
  2. Combine all ingredients together in a large mixing bowl and stir until combined.
  3. Pour into a greased 8×8 baking dish.
  4. Bake for 20- 25 minutes until a toothpick comes out clean.
  5. Let the bars cool completely before trying to remove from the pan. Then frost! 

Notes

Can sub agave for another sticky sweetener like maple syrup or honey

You can also use parchment paper in your pan instead of greasing it if you are scared of getting them out clean – but they came out fine for me!
