Epic S’mores Brownies

A (vegan) buttery graham cracker crust, topped with a gooey chocolate (chickpea) brownie, finished with a layer of golden brown marshmallows that will give you all the camp fire feels.  These healthy s’mores brownies truly are epic, try them for yourself!

These s’mores brownies are good all year round and these are made inside your kitchen so it doesn’t matter when you want to enjoy them! Let’s Make Some Epic S’mores Brownies!

So for this recipe I used ingredients that will give you all the true s’mores feels while making them healthier.

Starting with the crust.  I used Annie’s graham crackers.  They are organic, don’t contain high fructose corn syrup, and are free from artificial colors and preservatives.  These are not gluten free, but you could always try a gluten free brand like Pamela’s.  I have never tried it but that brand had good reviews online.  If you know another, let me know!

Next up, the brownie.  I used my recipe from my Bailey’s brownies.  Except I nixed the Bailey’s and used milk, and subbed the Bailey’s chocolate chips for regular ones.  The brownies are made with chickpeas so they are high in fiber and protein, they can be made gluten free if you use gluten free all purpose flour, and they are SOOO gooey and delicious. The best part is that these brownies are vegan.  That means you can under-bake them, let them stay melty and gooey like a true smores, and you don’t have to worry about any eggs!

Last, the marshmallows.  Honestly, I used regular marshmallows for mine.  Which are gluten free, but they are not sugar free or vegan.  If you want to use a vegan marshmallow, it looks like the brand Dandie’s might be a good one to try!

You are going to make the crust first and bake it, then top with the brownie mix.  The brownie mix will take a little longer to bake through than the original recipe because of the crust underneath it, but just use a toothpick to check! 

Last tip – broil the marshmallows with the pan on the lower rack of your oven.  This will make sure they don’t cook too quick before you can pull them out, plus it will keep the parchment paper from burning!

Ingredients

Graham Cracker Crust

  • 12 graham crackers
  • 6 tbsp vegan butter
  • 2 tbsp maple syrup (or honey if not vegan)

Brownie Layer:

  • I used my Bailey’s Brownies for this (a chickpea based brownie) and swapped the Bailey’s for milk and the Baileys chocolate chips for regular (vegan) chocolate chips.

Top Layer:

  • mini marshmallows (amount is up to you 😉 )

Instructions

  1. Make the crust – combine the graham crackers, melted butter, and maple syrup (or honey)  in your food processor and blend until a dough forms.
    1. Press the dough down on a parchment paper lined 8×8 baking dish.
    2. Bake for 15 minutes.
  2. While the crust is baking, make the brownie layer.
    1. Instructions in this post here.
    2. Note: I baked closer to 20 minutes for this recipe.  The brownies don’t touch the bottom of the pan so they don’t cook as fast.  Luckily this layer is vegan so let it be as gooey and messy as you want 😉
  3. Remove the pan from the oven once the brownie layer is baked and top with marshmallows.
    1. I just used enough to have one full layer on top.
    2. Turn your broiler on, place the pan on the lower rack in the oven (so the parchment paper doesn’t burn), and broil until marshmallows are at your desired “burnt-ness”.

Notes

To make gluten free, use gluten free graham crackers and gluten free all purpose flour in the brownies.

To make vegan, use vegan marshmallows (brand recommended above), and use maple syrup in the crust rather than honey.
