I am not joking. This cranberry walnut zucchini bread is sending some serious fall vibes. It’s got dried cranberries, pepitas (aka pumpkin seeds), walnuts, and some great fall spice from the nutmeg and cinnamon. And it is a lot healthier than most breads because it is made with almond flour (so it is gluten free!) and zucchini.
Why do I love baking with zucchini? It adds so much to baked goods. First of all, it is about 95% water. So it makes breads SUPER moist (yes I said moist). It also lightens the bread up. We don’t need to use as much flour so it reduces the overall calorie and net carb content. It adds extra fiber to the recipe, and zucchinis are known to be anti-inflammatory, have a high antioxidant content, and improve digestion.

Let’s Make Some Cranberry Walnut Zucchini Bread!
I love this bread because it is so easy. I used to be really intimidated by breads but once I tried them I learned they really aen’t has hard as you think.
The most difficult part about this is probably grating the zucchini 😛 and notice here you do not have to dry it out! We actually want all that moisture that the veggie brings. So don’t worry about that.
I used almond flour, but if you want to sub that for something else I’d recommend gluten free all purpose, or whole wheat if you are not worried about gluten. You can see the brands I use and recommend in my Amazon store.
And if you need something to spread on it – definitely try my homemade apple butter! It is perfect on this bread. I’ve also topped it with Georgia Grinders pecan butter and that is amazing too.
In addition to the listed ingredients, you will need:
- a grater
- two mixing bowls
- a bread pan
- oil to grease your pan

Cranberry walnut zucchini bread is moist and light, made healthier using zucchini, almond flour, and no refined sugar. It is the perfect blend of fall flavors, spiced and subtly sweet, and is the perfect addition to your morning breakfast.
Ingredients
- 2 cups almond flour
- 2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp salt
- 1 tsp ground flax seeds
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp stevia (optional)
- 2 eggs
- 1 cup shredded zucchini (about 1 small/medium zucchini)
- 1/2 cup unsweetened apple sauce
- 1 tsp vanilla
- 1/4 cup cranberries
- 1/4 cup walnuts
- 1.5 tbsp pepitas
- Additional pepitas and cranberries for topping
Instructions
- Preheat oven to 350F.
- Grate your zucchini and set aside (no need to get the water out for this one – we want that to keep it moist!).
- In a large mixing bowl, combine all dry ingredients (first eight ingredients listed above).
- In another bowl, beat the eggs, and then add zucchini, vanilla, and apple sauce.
- Add your wet ingredients to the dry.
- Mix in cranberries, pepitas and walnuts.
- Pour into a greased 5×9 bread pan.
- Sprinkle with additional pepitas and cranberries for topping.
- Bake for 50 minutes until golden brown at edges and a toothpick comes out clean.
Notes
You can also use homemade apple sauce if you want to get fancy!
