Cracker breaded chicken nuggets are tossed in “breadcrumbs” made from your favorite cracker, baked to a crisp perfection, and are gluten free, grain free, and a healthy way to get your nugget fix. Served with a chile infused honey for a sweet and spicy kick.
So you could really use any cracker that you want for this recipe, but I used Simple Mills sprouted crackers, everything flavor. I have also made them with the jalapeno flavor and loved them. What is great about these crackers in particular is not only their taste, but their ingredient list and nutrition profile. They only have nine total ingredients, all of which are real ingredients you can pronounce (nothing weird) and they are gluten free, grain free, soy/corn/dairy free – basically all of the things.
This cracker breaded chicken nugget recipe is a favorite at our house. We love how easy it is and how flavorful. And this is coming from a girl with a husband who is a Chik Fil A addict – so you know it is the truth. If you want a good side dish to go with them you could go with the classic fries – in particular my sweet potato fries, or switch it up a little bit and serve it with my roasted carrots or cabbage slaw. Let’s Make Cracker Breaded Chicken Nuggets!
First get your favorite cracker. I used a whole bag of the Simple Mills, which was a 4.25 oz box, so you can decide how much you need but the amount I got from this worked perfectly. You can either just crush the crackers with your hand, or if you want a finer breading, you can use a food processor. It is up to you! I have done it both ways. The ones you see in the photos are done by hand, and have larger chunks of cracker.
Like I said the amount worked perfectly – for me. This recipe as is probably will only feed one person. I used about three to four chicken tenderloins, cut them into nuggets, and had enough breading to cover them. So if you want to feed two I’d go ahead and double it.
And the chile infused honey – optional but highly recommended. I used Mike’s Hot Honey to drizzle on top of these guys and WOW did I love it (Neil did too). If you love a good spicy/sweet combo I definitely suggest you get some of this. But of course you don’t have to! You can also use any other condiment. I have been loving Sir Kensington’s sriracha mayo (and I usually hate mayo!) or you could use my creamy horseradish sauce to dip.
In addition to the listed ingredients, you will need:
- Food processor (optional – can use hands to crush crackers in bag)
- 2 small bowls
- kitchen scissors
- cookie sheet
- aluminum foil or parchment paper or oil to grease cookie sheet

Ingredients
- 1 box of Simple Mills everything sprouted seed crackers
- 1 egg
- 4 chicken tenderloins
- Mike’s Hot Honey (as much as you want!)
Instructions
- Preheat oven to 375F.
- Blend your crackers in a food processor until they are small and/or flour-like. Pour into a small bowl, set aside.
- Scramble egg in a separate bowl.
- Cut each tenderloin into nugget sized pieces, dip each nugget first into the egg wash, and then into the breadcrumbs, place on a greased cookie sheet lined with aluminum foil.
- Bake for 15-20 minutes.
- Drizzle as much hot honey on top as you desire and enjoy!
Notes
If you don’t have a food processor you can crush crackers while they are in their bag using your hands. You will have larger chunks of cracker but it will still be great – maybe even crispier!
