How to Make Cookie Dough Fudge

How to Heat Treat Flour

Heating flour is a process known as heat treating, and it is done to reduce the risk of foodborne illness caused by bacteria such as E. coli and Salmonella that can be present in raw flour. Since we’re not baking this fudge, it’s important to heat the flour before using. Here’s how to heat-treat flour:

Microwave Method

  1. Spread flour in a microwave-safe bowl: Place the desired amount of flour in a large microwave-safe bowl.
  2. Microwave on high for 30-second intervals: Microwave the flour on high for 30-second intervals, stirring well after each interval.
  3. Use a food thermometer: Use a food thermometer to check the temperature of the flour in several places. The flour must reach an internal temperature of at least 165°F (74°C) to be considered safe to eat.
  4. Cool and store: Once the flour has been heat treated and reaches the proper temperature, remove it from the microwave and allow it to cool completely before using it in your recipe. Store any leftover heat-treated flour in an airtight container at room temperature.

Oven Method

  1. Preheat oven: Preheat your oven to 300°F (150°C).
  2. Spread flour on a baking sheet: Spread the desired amount of flour on a baking sheet in a thin, even layer.
  3. Bake for 5-10 minutes: Place the baking sheet in the preheated oven and bake the flour for 5-10 minutes. The exact time will depend on the amount of flour and the type of oven, so keep an eye on it to avoid over-baking.
  4. Check the temperature: Use a food thermometer to check the temperature of the flour in several places. The flour must reach an internal temperature of at least 165°F (74°C) to be considered safe to eat.
  5. Cool and store: Once the flour has been heat treated and reaches the proper temperature, remove it from the oven and allow it to cool completely before using it in your recipe. Store any leftover heat-treated flour in an airtight container at room temperature.
