So this recipe was originally supposed to be Easter cookies butttt unfortunately the colors didn’t quite turn out as I’d hope (I guess mixing with almond flour doesn’t create the same color as when you mix with yogurt like I did with my hibiscus tartlets– this is a perfect Easter color aghhh!) BUT. These are delicious so Easter cookies or not, I had to share! They are based off the same recipe as my Christmas Superfood Cookies just made with a couple small tweaks and different superfood powders 🙂 so if you are ever feeling some red and green cookies over blue and purple, go check that one out too!
Let’s Make Some Superfood Almond Flour Cookies!
This recipe is super easy and only requires FOUR ingredients (plus salt and water but really who counts those??). Plus they are gluten free, vegan, and delicious!
The only real trick here is to add the water one tablespoon at a time. If you think you have the perfect dough before adding four, stop. If you think it is still too dry, add a little more. You want it to feel like any other cookie dough so just use as much water as you need for that!
I have not tried this recipe with any other flour and due to the fact that it is the only main ingredient, I recommend sticking with almond flour. Check out my Amazon shop to see what brand I recommend! You will also find the superfood powders here.
And if you are wondering how you could possibly make these even better – try filling two of these cookies with my coffee protein frosting – it is pure bliss. See pic above!
You can also play around with any superfoods you have – maybe orange with turmeric, or green with spirulina, what will you try??
