These cold brew donuts are made with REAL coffee so not only will your breakfast energize your morning by nourishing your body, it also gives you that caffeine kick we all know we desperately desire first thing in the morning. That is a win win in my book! I am nothing without my morning coffee 😛
But what makes these donuts even better? They are made with nutritious ingredients and are refined sugar free. Did you know that when you eat a sugary breakfast you are more likely to consume extra sugar and calories throughout the day? Luckily you don’t have to load your breakfast with sugar in order to enjoy a sweet start to your day! These are naturally sweetened with apple sauce and date nectar and won’t spike your blood sugar or cause you to crash an hour after eating them. So these are donuts you do NOT need to feel guilty about!
And just when you thought it couldn’t get any better. Take them up a notch with my coffee protein frosting. In my opinion a frosted donut is always more fun than a not frosted donut. But in addition to flavor, the frosting will add a good amount of protein as well as healthy fats (it is made from coconut cream), which will provide you with a truly balanced breakfast that contains all the macros you need to energize your morning. And believe it or not, even with the frosting this is REFINED SUGAR FREE!
Lastly, I didn’t go out and buy any expensive cold brew to make these. I used homemade cold brew that I made all by myself! if you follow me in Instagram you hear me talking about this product a lot but I am OBSESSED with the cold brew maker I bought for Neil’s birthday. It was not expensive (like $15), it uses the same coffee we use in our pot so we already have it handy, and it makes about 4 large cups of cold brew – for like 50 cents worth of coffee. Vegan, Refined Sugar Free
Your morning cup of joe in DONUT form! These cold brew donuts are light and fluffy, bursting with flavor, and are vegan and refined sugar free. Pair them with my coffee frosting and you’ve got all the caffeine you need!
Ingredients
- 2/3 cup cold brew (I used homemade that I make with this FAVE PRODUCT)
- 1/3 cup unsweetened applesauce
- 1/3 cup cashew milk (or your favorite dairy free milk)
- 1.5 cup whole wheat pastry flour
- 1–2 tbsp date nectar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat oven to 350F.
- Mix all ingredients together except for the baking powder and soda (I started with wet ingredients in my bowl and mixed the dry ones into them).
- Let batter chill in fridge for 15-30 minutes.
- Stir in baking powder and baking soda.
- Pour batter into greased mini donut pans.
- Bake for 12-14 minutes.
- Wait until they are completely cooled to remove from donut pan.
Notes
Prep time includes time to chill in the fridge. Active work time is probably only about 10 minutes max.
I like making donuts with silicone pans like these. Makes it easy to pop them out when they are done without breaking them!
This made 9 mini donuts for me. If you make regular sized donuts it will make less and your bake time will increase a couple minutes, just keep an eye on it after about the 14 minute mark.
