Coffee PROTEIN Frosting

This Coffee Frosting is unlike any frosting you’ve bought at the store.  It is light and creamy, full of real cold brew flavor, but is made without refined sugar, packed full of protein, and is coconut cream based.


Whoever said frosting couldn’t be delicious and good for you was lying.  This recipe is super fluffy and light, perfect to top just about any baked good, and is made with three nutritious ingredients.  Yep I said nutritious.  Plus it is is dairy free and refined sugar free.  And takes all of about five minutes to whip together!  So next time you’re making some cupcakes save yourself the trip to the store and try this instead.

Let’s Make Coffee Frosting!

Believe it or not, the ingredients in this recipe make for a well-rounded snack. The coconut cream provides healthy fats, the protein powder offers a protein boost, and the cold brew gives you that much-needed caffeine kick. For added fiber and antioxidants, try dipping apple slices in it—you’ll have it all!

Before you go buying expensive cold brews, check out this gadget. I got it for Neil as a Christmas gift because we were spending too much on cold brew, and it works so well! We make a batch almost every weekend using regular coffee, and it’s definitely worth the purchase.

Depending on the protein powder you use, you might want to add a sweetener. I used Earthly Choice and found it didn’t need any, but if you do, I recommend Organic Stevia. It’s a zero-calorie, safe option. You could also use coconut sugar or cane sugar, but avoid liquid sweeteners like agave or maple syrup to prevent your frosting from getting too runny. But taste it first—I really don’t think it needs extra sweetness!

If you plan ahead, refrigerating the coconut cream overnight helps separate the cream from the liquid, making for an extra-thick frosting. I’ve made it both ways, depending on when I decide to prepare it, and it works well either way! If you do refrigerate it, there’s no need to let it set in the fridge afterward.

Instructions

  1. Drain the coconut cream of the liquid in the can, pour the cream into a mixing bowl.
  2. Add cold brew and protein powder, whisk until blended.
  3. Optional: taste and add some organic Stevia or other dry sweetener of choice (don’t use a liquid sweetener, it will affect the consistency of the frosting).
  4. Cool in fridge for 15-20 minutes to let it set.
  5. Serve on anything from brownies to cupcakes to bread to fruit!

Notes

For extra thick frosting, leave coconut cream in fridge overnight before making.
