Coconut Cashew Bliss Balls

Creamy cashew butter, sweet maple syrup, gluten free oats, and shredded coconut flakes.  Four ingredients are all you need to make these coconut cashew bliss balls.  The perfect balanced snack to keep you energized and satisfied!

Okay to be honest I have absolutely no idea what qualifies something as a “bliss ball.”  But according to Google bliss means perfect happiness and that is exactly what these balls bring so I think they qualify!  They are made with only FOUR ingredients, they are NO bake, plus they are gluten free, vegan, and refine sugar free!

The cashew butter provides protein, the oats are a complex carb, the coconut flakes are a great source of healthy fats, and the maple syrup brings a little sweetness into this treat.  They are basically a balanced meal all by themselves!  Feel free to add other toppings as desired as well (I love mini chocolate chips, dried gogi berries, or sprinkles).

Let’s Make Some Coconut Cashew Bliss Balls!

Literally the easiest recipe ever I am not even sure I can give you instructions.  All you need to do is start by measuring out your cashew butter (I used Abbys Better coconut cashew butter for extra coconut flavor) and your maple syrup and mixing them together.  I will say make sure your cashew butter is drippy – but I haven’t seen any super processed cashew butters personally so that won’t really be a problem.  Unless you swap for peanut butter, then just make sure it is drippy.  You can really use any nut butter for this!  And buy good quality maple syrup too.

Once you’ve got those combined just pour in your oats and your coconut flakes (I like to buy unsweetened coconut flakes).  Add your oats a little at a time and if you think they start to get too dry just stop short of the amount suggested on the recipe.

I rolled mine in extra coconut flakes but you could also omit that step or roll in something fun like cocoa powder!  The possibilities are endless 😛 I didn’t measure mine out as I rolled them into balls I just tried to keep them all the same size.  But you can use a tablespoon or a cookie scoop if you want them exactly perfect! This made 14 for me.

And then keep them refrigerated for the best texture!

In addition to the listed ingredients, you will need:

  • a large mixing bowl
  • a spoon and/or fork to mix
  • a cookie scoop if you want

Ingredients

Scale
  • 1 and 1/4 cup gluten-free oats
  • 1/4 cup maple syrup
  • 1 cup cashew butter or coconut cashew butter
  • 1/3 cup unsweetened coconut flakes (+ more to roll in if desired)

Instructions

  1. In a mixing bowl combine the cashew butter and maple syrup and mix until well combined.
  2. Add in the coconut flakes and slowly stir in the oats until you get a texture you like (not too wet but not too dry).
  3. Using your hands (or a tablespoon or cookie scoop) roll into evenly sized balls, and roll in more coconut flakes if desired.
  4. Place in the fridge for 30 minutes to harden a little, and store there for best texture!

Notes

You can really use any nut butter for this (almond, peanut, etc) just make sure it is drippy!

You can also add in any other toppings you want! (I like chocolate chips or gogi berries)
