These delightful Ginger Christmas Cookies are a cross between sugar cookies and gingerbread cookies! These delectable treats are the perfect combination of warmth, spice, and sweetness, making them a festive addition to any cookie platter.

Although I’m a big fan of Traditional Gingerbread Cookies, I wanted more of a silkier taste and texture for my corporate get-together that had enough whip appeal to catch their attention. Thus, our white chocolate ginger Christmas Cookies were born!
Chewy ginger molasses cookies have a smooth, dough-like texture that makes them an instant hit with both kids and older adults. The sweet and savory flavoring of the ground cloves and butter mixed in with the cinnamon gives these Christmas Cookies the attention they deserve.

How to Make Christmas Cookies

EQUIPMENT NEEDED

  • Stand or hand mixer
  • Scoop
  • Spatula
  • Mixing bowls, microwave sage

As well as a cookie sheet, glass cup, and cooling rack.


To save yourself some time – and the extra arm workout- use a hand or stand mixture. A high-powered hand mixer with 120 watts or more- will cut through your prep time quickly — leaving you with an ultra-luscious fluffy dough that’s perfect for dipping into the white chocolate sauce.

Description

These delightful Ginger Christmas Cookies are a cross between sugar cookies and gingerbread cookies! These delectable treats are the perfect combination of warmth, spice, and sweetness, making them a festive addition to any cookie platter.


Ingredients

Scale
  • ¾ cup unsalted butter (softened)
  • ½ cup granulated Sugar
  • ½ cup light Brown Sugar
  • 1 large egg
  • ¼ cup molasses
  • 21/2 tsp ground ginger
  • ¾ tsp ground cloves
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 1 tbsp whole milk
  • 21/4 cups all purpose flour
  • 1 tsp baking soda
  • 12 oz white chocolate chips
  • 1 bag colored candy melts (optional)

Instructions

  1. Preheat oven to 350°F.
  2. Using your stand mixer, cream sugars and butter until fluffy. Scrape down the sides.
  3. Add the egg, molasses, ginger, ground cloves, cinnamon, salt and milk.
  4. Cream again until combined again.
  5. Scrape the bowl down.
  6. Add the baking soda and flour and stir until just mixed. Do not over mix.
  7. Scoop the cookie dough (about 2 tablespoons) into hand and roll into a ball.
  8. Line a cookie sheet with parchment paper and lay these balls on there, at least 2” apart.
  9. Use the bottom of a glass and press down gently on each ball of cookie dough.
  10. Bake for 12 minutes, if needed rotate to the cookie sheet half way (depending on your oven)
  11. Remove from the oven and allow cookies to sit for 5 minutes then transfer to a cooking rack.
  12. Melt the white chocolate in a small bowl (big enough to dip a cookie in half way though)
  13. Dip each cookie to coat half of the cookie.
  14. Decorate each cookie as preferred using melted candy melts.
