How to Make Chocolate Chip Collagen Cookies
One of the best parts about this recipe is that it only requires one bowl! You will mix all of your dry ingredients first, then add your wet ingredients into the same bowl, and stir til everything is combined! Doesn’t get much simpler than that.
I used almond flour in this recipe and have not yet tested any other flours so I can’t recommend any subs at this time. But the almond flour really makes these so cakey and decadent that I think it’s worth the trip to the store if you don’t have any on hand!
Other than that this is super easy, the dough is a little sticky so be prepared for that when you are making the balls. I like using a cookie scooper to keep the mess off my hands. But either way will work!
In addition to the listed ingredients, you will need:
- a mixing bowl
- a fork or whisk to mix
- a cookie scooper (optional)

- Using a cookie scooper or tablespoon, create 20 balls of dough, flatten slightly with fingers onto a cookie sheet lined with parchment paper.
- Cook for 20 minutes, until edges start to brown and cookies feel firm but not too hard- they will keep cooking once you take them out.
Notes
Don’t be afraid to take these out while they are still a little soft! You don’t want to overcook them because you really want that great cake texture.

Best guilt free cookies I’ve ever tasted! Thank you so much! They are delectable!!!
These didn’t turn out like the pictures. The first batch was not doughy but very moist, like cake batter and flattened. But they were tasty. The second batch, I used Swerve and had to throw them out. I had to add almond meal in them to make them more like dough vs batter.
Could you sub Swerve? Is the stevia powdered or liquid? Thank you 🙂
These were fantastic! I can’t even tell you how fast we ate these cookies up. I will be making these again!
Such a brilliant idea – I have some collagen powder handy and was tired of stirring it into my coffee. Trying these stat!
