I love using collagen in my smoothies and coffee, and I wanted some more fun ways to incorporate it into more recipes.  If you’re new to collagen and its benefits, check out my blog post: Collagen Peptides Explained for some more info.  If you already love using collagen, be sure to check out some other recipes like my chocolate collagen cauliflower oatmeal, my vanilla collagen latte, and these cereal protein bars.

How to Make Chocolate Chip Collagen Cookies

One of the best parts about this recipe is that it only requires one bowl!  You will mix all of your dry ingredients first, then add your wet ingredients into the same bowl, and stir til everything is combined!  Doesn’t get much simpler than that.

I used almond flour in this recipe and have not yet tested any other flours so I can’t recommend any subs at this time.  But the almond flour really makes these so cakey and decadent that I think it’s worth the trip to the store if you don’t have any on hand!

Other than that this is super easy, the dough is a little sticky so be prepared for that when you are making the balls.  I like using a cookie scooper to keep the mess off my hands.  But either way will work!

In addition to the listed ingredients, you will need:

  • a mixing bowl
  • a fork or whisk to mix
  • a cookie scooper (optional)

Chocolate Collagen Cookies

  • Author: Megan
  • Total Time: 30 minutes
  • Yield: 20 cookies 1x
  • Diet: Gluten Free

Gluten Free, Dairy Free, Refined Sugar Free

A cookie that tastes like a chocolate cake but is made with protein packed collagen, gluten free almond flour and NO refined sugar.  What’s not to love?!

  • 1/2 cup chocolate collagen
  • 1 cup almond flour
  • 1 egg
  • 1/4 cup almond milk
  • 2 tablespoons stevia
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips

  1. Preheat oven to 350F.
  2. Add all dry ingredients into a bowl and stir until combined.
  3. Add wet ingredients – mix well.
  4. Using a cookie scooper or tablespoon, create 20 balls of dough, flatten slightly with fingers onto a cookie sheet lined with parchment paper.
  5. Cook for 20 minutes, until edges start to brown and cookies feel firm but not too hard- they will keep cooking once you take them out.

Don’t be afraid to take these out while they are still a little soft!  You don’t want to overcook them because you really want that great cake texture.

Make sure chocolate chips are dairy and sugar free if desired.
