If you love cakey brownies, you need to make these pancake mix brownies! They’re are light and fluffy, moist and chocolatey.  Made with a pancake mix, they are super easy to make!

These pancake mix brownies are perfect for a lighter dessert option.  They are fluffy and chocolatey but don’t weigh you down.  But even if you are a thick, dense brownie fan, don’t write these off yet.  Keep them in mind when you are in the mood for something a little different because the flavor is amazing!

How to Make Pancake Mix Brownies

For this recipe, you’ll need a box of pancake mix. I’ve made these with regular pancake mix. This recipe also works with Kodiak Cakes Pancake Mix. I’ve used the chocolate mix to make it extra rich and chocolatey! I don’t recommend using a buttermilk mix. But any plain pancake mix should work great!

Variations & Additions

I added a thin layer of “frosting” using Peanut Butter & Co’s Dark Chocolatey Dreams spread. This chocolate peanut butter makes a perfect frosting! I melted it in the microwave for 15 seconds to make it easier to spread. You could also top it with traditional frosting or peanut butter.

Feel free to add nuts or shredded coconut if you like a little texture in your brownie. You could even add a swirl of peanut butter right into the batter.

Description

If you love cakey brownies, you need to make these pancake mix brownies! They’re are light and fluffy, moist and chocolatey.  Made with a pancake mix, they are super easy to make!


Ingredients

  • 3 eggs

  • 1/2 cup vegetable oil (or melted coconut oil)

  • 1/3 cup granulated sugar

  • 2/3 cup Pancake Mix

  • 1/4 cup cocoa powder

  • 2/3 cup dark chocolate chips

  • Optional: Frosting and sprinkles for topping

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl combine eggs, oil, and sugar until combined.
  3. Stir in pancake mix and cocoa powder, and stir until no lumps remain. Stir in chocolate chips.
  4. Pour into an 8×8 baking pan lined with parchment paper or sprayed with non-stick spray.
  5. Bake for about 20-25 minutes, until a toothpick inserted in the center comes out clean.

Notes

I used Peanut Butter & Co’s chocolate peanut butter as a frosting. I used about 3 tablespoons to spread a thin layer on top.

  2. Hi, I love this recipe! I have two questions for modifying it a little bit. I want to make it without the chocolate powder and with cotton candy extract instead so it’s like a cotton candy cake. How much extract should I add? I also really love cream cheese and I’m wondering if it’s possible to incorporate it into this? If so, how much should I add and in what step? Thank you so much! I’m new to baking so I apologize if these are really simple questions.
