Baking with zucchini might just be the greatest secret of all time. That is not really a secret anymore because it is so great that everyone has. started to do it! And I am here for it. Baking with zucchini makes recipes SO moist (sorry) and adds some great nutrient and fiber to your dishes while crowding out some flour so really all around it is just a great hack. And this zucchini bread is no exception. It is super moist and fluffy and I went with classic chocolate chips because melty chocolate is alwaysssss a winner. But you could always mix it up and add more/different add ins too! You do you.

Let’s Make Chocolate Chip Zucchini Bread!
So let’s start by talking about the hero ingredient – our zucchini. I honestly am not sure if most people peel their zucchini when using it for baking, but I never do. The skin has great fiber and I have literally never noticed it! So leave that on (in my opinion). And then I like to use my smallest grater so they are littler pieces. I don’t think using a wider grater would make much difference, I just like to make sure the veggie is extra sneaky in there.
Lastly, you need to pat it dry. Zucchini has a ton of water in it – which is great for making this bread moist – but if you don’t get any of that out you likely won’t be able to get the middle of your bread completely baked through. Don’t worry about getting all the water out, just pat it a few times with a paper towel so it isn’t soaking.
I used whole wheat flour in this loaf but you should be able to do a one to one swap with gluten free all purpose flour and still get a great result. Just don’t try doing that with almond or coconut flour cause those are very different.
Last tip, I like putting parchment paper in my loaf pan to help ensure I get my loaf out cleanly. If you don’t have any, just make sure you spray the pan really well.

Healthy zucchini bread sweetened with maple syrup and loaded with melty chocolate chips. Definitely my preferred way to get a serving of veggies in!
Ingredients
- 1 cup of shredded zucchini
- 1 egg
- 1/4 cup melted coconut oil
- 1/3 cup unsweetened apple sauce
- 1/3 cup maple syrup
- 1 tsp vanilla
- 1.25 cup whole wheat flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- Chocolate chips to your heart’s desire
Instructions
- Preheat oven to 350F.
- Shred your zucchini (I like using a small grater) and then pat dry a few times to remove some of the excess moisture (this helps make sure your bread bakes through and isn’t too wet in the middle).
- Add your egg, apple sauce, maple syrup, vanilla and coconut oil with your zucchini in a bowl and stir to combine.
- In another bowl combine your flour, baking soda and powder, and spices.
- Add your dry ingredients to your wet and stir until combined. Fold in your chocolate chips.
- Line a bread pan with parchment paper, spray the edges with oil, and then pour your batter in your pan. Top with additional chocolate chips if desired. Bake for 40-45 minutes, turning the pan halfway through, until edges are brown and a toothpick comes out clean.
Notes
For a gluten free option, swap whole wheat flour with gluten free all purpose.
To ensure this is dairy free and refined sugar free, make sure your chocolate chips are both! I like using Lily’s dark chocolate chips.
