Irresistibly delicious, these Chocolate Chip Cookie Sandwiches are going to be a favorite summer treat for the kids and kids-at-heart! Easy to make, they are perfect for satisfying the sweet tooth!
Ingredients
Chocolate Chip Cookie Ingredients
- 1 cup unsalted butter (softened)
- 1/2 cup granulated sugar
- 1 1/4 cup packed brown sugar
- 2 eggs
- 2 1/2 teaspoon vanilla extract
- 2 2/3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 1/2 teaspoon salt
- 10 oz semisweet chocolate chips
Frosting Ingredients
- 1 cup butter (room temperature)
- 1/2 cup shortening
- 2 tablespoons hot water
- 2 tablespoons vanilla extract
- 4-5 cups powdered sugar
Instructions
Cookie Instructions

In the bowl of a mixer cream together the butter, and both sugars.

Once the butter and sugars are well combined, add in one egg at a time, mix well.

Add in the vanilla and salt, mix until light and fluffy.

When the mixture has become fluffy, add in the flour, baking powder, and baking soda. Mix well.

Fold in the chocolate chips.

Cover your mixing bowl and put into the refrigerator to chill for 30-60 minutes.

Preheat the oven to 350 degrees Fahrenheit

Take your dough out of the refrigerator and scoop out dough and roll between your hands into 1.5” balls.

Place the dough balls on a baking sheet lined with parchment paper, about 2” apart from each other.

Bake in the preheated oven for approx 12-15 minutes, or until the edges are golden and the center has just barely set.

Remove from the oven and let cool completely.
Frosting Instructions

In the bowl of a mixer with a whisk attachment put your softened butter and shortening.

Mix together on medium high speed until they are fully combined.

Add in 2 cups of the powdered sugar, mix until combined, then stop the mixer and scrape down the sides.

Add in 2 more cups of the powdered sugar and mix until combined.

Pour the vanilla and the hot water into the bowl with the frosting and continue mixing for 7 minutes until it is very light and fluffy. If the frosting seems a little loose, add more powdered sugar and mix well.

If coloring the frosting, scrape down the sides of the bowl, add in the food coloring and mix well.

Spoon your frosting into a piping bag (or zip top bag and snip a corner). Set aside until ready to assemble.
To Assemble the Cookie Sandwiches

When the cookies have cooled completely Cut the end off your piping bag and place the star tip into the bag.

Take your cookies and match them into pairs according to size/shape.

Take your first pair of cookies and turn one of the cookies bottom-side facing up. Pipe your frosting onto the bottom of that cookie starting from the middle and working your way out.

Take the other cookie and place the bottom-side onto the frosting of the first cookie. Give it a soft squish, then set aside.

Repeat steps 3 & 4 until all the cookies have been made into sandwiches.

Store in an airtight container in the refrigerator.
