Cherry Icebox Cake

This Cherry Icebox cake is a delightful dessert made with layers of graham crackers, whipped cream, and cherry pie filling. This no bake recipe is easy to assemble then left to chill, making it an easy but delicious treat!



For the crust:

  • 1 1/2 sleeves of graham crackers – crushed in the blender
  • 1 tablespoon sugar
  • 1/2 cup butter, melted

For the filling:

  • 28 ounce packages of cream cheese – softened
  • 1 (14oz) can of sweetened condensed milk
  • 1/2 cup of powdered sugar
  • 1 teaspoon of vanilla
  • 1 teaspoon of lemon juice
  • 1 (12oz) can of Cherry Pie Filling – for the topping


  1. Place the can of cherry pie filling in the refrigerator, and let it cool until time to add it to the dish.
  2. Line the bottom of a 9 X 9 inch dish with parchment paper, and set aside.
  3. Place the graham crackers in the blender, and blend until they’re fine crumbs.
  4. Add the sugar, and stir.
  5. Place the stick of butter in a large microwave safe dish, and melt butter in the microwave for about 10 seconds at a time, until butter is completely melted. Add graham cracker crumbs to the butter, and stir well to coat all of the graham cracker crumbs.
  6. Place graham cracker crumbs in the parchment lined dish, and press crumbs into dish, evenly, to form the crust. Place the dish in the freezer to help set the crust.
  7. Place the cream cheese in the mixing bowl of a stand mixer, and mix until the cream cheese is smooth. Add the sweetened condensed milk to the mixer, and blend until smooth and creamy, scraping down the sides of the mixing bowl, and blending.
  8. Add the powdered sugar, vanilla, and lemon juice, and blend until all ingredients are completely blended, and the mixture is thick and creamy.
  9. Remove the dish from the freezer, and pour the cream cheese mixture over the crust, and place back in the freezer to set the filling.
  10. Leave the dish in the freezer for about 2 hours, and then remove the cherry pie filling from the refrigerator, and pour cherry pie filling over the cream cheese . Smooth out pie filling, and place the dish back in the freezer.
  11. Remove the dish from the freezer about 15 minutes before serving, and allow the cherry cheese dish to thaw a bit. Cut into 2 X 3 inch squares, serve and Enjoy!
