Combining our love for all things avocado and cheese, how could that not be good? Turns out it is amazing. This cheesy guacamole dip is light and creamy and everything your next party needs.
I love all things avocado. I love having them in my salads, by themselves with a little salt, I have a traditional guac dip I love, I even love baking with them (try my triple chocolate avocado zucchini bread or my avocado pillow cookies and you wont be sorry). But how did it take me so long to think about combining it with cheese?! Well better late than never and here we are and I’m never turning back.
In this dip I used cottage cheese. DONT RUN AWAY. I don’t like cottage cheese either. I recently decided to give it a try with this pasta recipe because I figured the heat would break down all the chunks – and it worked like a charm – and here I am getting rid of the pesky texture a lot of us don’t like by putting it in the food processor! So we get the cheesy flavor but none of the weird stuff. And my friends devoured this at a party we had. I think you will love it too!
Let’s Make Some Cheesy Guacamole Dip!
Superrr easy recipe here. All you need is an avocado, some cottage cheese, a red onion, and spices. Once you have all your ingredients just through them together in a food processor and blend until it is the consistency you like! You do have the option to add the red onion after blending if you want that to stay in bigger pieces, what I like to do is normally include half of it beforehand and the second half after. It allows the flavors to blend while also having some good chunks of diced red onion in there (I love onion). But if you hate onions, just leave that out 🙂
The longer you blend it the less chunky the cottage cheese will be (that is how I like it) so just start by belnding for about 30 seconds and then decide as you go if you want to do more!
Then dip all of your faves! It is really good with pita or tortilla chips, I like it with veggies, and I am sure just about anything would be awesome with it so you let me know if you find anything you really like!
