Soup season is the best season. I love this carrot ginger soup because it is such a cozy meal but at the same time it is so refreshing! I love that it is a recipe that can warm you up on a cold night without making you feel heavy and gross. So many great flavors and it is also pretty unique compared to most other soups which I think makes it extra fun.

Ingredients You’ll Need for Carrot Ginger Soup:
- Carrots – the main ingredient in this carrot ginger soup! Makes it really fresh, slightly sweet, and really healthy
- Onion – to add some depth of flavor
- Vegetable broth – we need liquid to make soup!
- Dairy free milk – to help make it super creamy. You can use and dairy free milk that you prefer.
- Olive oil – adds some richness to the flavor profile
- Spices – I used garlic, salt, pepper, and of course most importantly, ginger, to add lots of great flavor to this soup.
Tips for the Perfect Carrot Ginger Soup:
This soup recipe is fairly easy, but here are some tips to make sure you get the perfect batch the first time!
- Don’t skip sautéing the onion and garlic. This really brings out their flavors that you won’t get as much of if you skip this.
- Blending – if you have an immersion blender it is super easy to just stick it in the dutch oven and blend. But if not, don’t worry. You can definitely just transfer the soup to a traditional blender, blend, and then move back to the dutch oven. Just don’t put it in your blender piping hot because it will create a lot of steam that could hurt you when you open it.
- Taste as. you go! Feel free to add more or less of a certain spice depending on what you like. And you can also add more or less liquids depending on how thick you want it to be.
- Garnishes – instead of creme fraiche, I just watered down a little plain greek yogurt to use as my cream. It is a high protein, low fat option. But you also don’t need to do this if you don’t want to! You could also use a vegan yogurt to keep this vegan.

This carrot ginger soup is fresh and creamy, the perfect cozy recipe to brighten up a cold day. It is made with only 5 main ingredients, is an easy dinner recipe, and is gluten free, vegan and refined sugar free.
Ingredients
- 2 tablespoons olive oil
- 3/4 cup diced yellow onion (about 1/2 a medium onion)
- 3 cloves garlic minced
- 1 teaspoon freshly grated ginger
- 3 cups chopped carrots (about 5 large carrots)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups vegetable broth
- 1 1/2 cups almond milk (or one 15oz can coconut milk for an extra creamy flavor)
Instructions
- In a large dutch oven, add olive oil and onion and cook at medium heat for 5-7 minutes, stirring frequently, until soft.
- Add garlic and ginger and continue to cook for 1 minute.
- Add carrots and vegetable broth and simmer until carrots are soft, about 30 minutes.
- Remove from heat and add the milk. Blend by using an immersion blender or moving it to a traditional blender.
- Pour back into pot and serve.
Notes
Any dairy free milk will work – I used almond milk.
Feel free to taste as you go and add more or less of any spice, and more or less liquid depending how thick you want it!
