Description

This homemade Carrot Cake has a delicious spice cake flavor filled with fresh carrots and topped with an easy homemade cream cheese frosting. It’s simply the best!


Ingredients

For the cake:

  • 2 cups granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon allspice
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 1/2 cups vegetable oil
  • 4 large eggs
  • 3 cups grated carrots

For the Cream Cheese Icing

  • 2 cups powdered sugar
  • 8 tablespoons butter (softened)
  • 8 oz cream cheese (softened)
  • 1 teaspoon vanilla or orange extract

Instructions

For the cake

  1. Preheat the oven to 350°. Grease 8×11 inch pan and set aside.
  2. Combine all dry ingredients
  3. Add oil and then eggs, one at a time, mixing after each addition.
  4. Stir in grated carrots
  5. Pour into prepared pan and bake on center rack of the preheated oven for approximately 35 minutes or until a toothpick inserted into the center comes out mostly clean.
  6. Cool completely on a wire rack

Prepare the Cream Cheese Icing

  1. Add all icing ingredients into the bowl of an electric mixer and mix until thoroughly combined and fluffy.

  2. Allow the cake to cool completely, then top with frosting.
