Carrot Cake Mix Cookies

These soft and chewy carrot cake cookies are made with just 3 ingredients! You can turn a box of cake mix into tasty cookies in minutes!

While I love carrot cake, these cake mix cookies might be even better! They’re easy to make and easy to share. They’re slightly crispy on the edges while being perfectly soft and chewy in the middle. These cookies will disappear quickly! Feel free to top them with your favorite cream cheese frosting or enjoy them plain!

Cookie Ingredients

  • Carrot Cake Mix– You need a 15.25 oz box of cake mix. I used Dunkin Heins carrot cake mix but you can use any brand. Just make sure it’s an 15.25 oz box that makes a standard 9×13 cake.
  • Oil– I used vegetable oil but any neutral oil such as avocado oil or canola oil will be fine.
  • Eggs– You’ll need 2 eggs to help bind the cookies and add moisture.

Carrot cake has a mild spice flavor and it’s studded with bits of carrot. I think these cookies have plenty of sweetness on their own so I didn’t add frosting, but you can add cream cheese frosting if you like! These cookies are slightly crispy on the edges and soft and chewy in the middle.

Tips for the Best Carrot Cake Cookies

  • I like to use a cookie scoop so that my cookies are uniform in size and bake evenly.
  • I recommend using parchment paper on your baking sheet to prevent the cookies from sticking.
  • Check your oven for hot spots and rotate the pan during baking, if needed. Some ovens will bake faster in the back than the front so rotating the pan can help with even baking.

Variations and Substitution Ideas

Feel free to frost these with cream cheese frosting for even more of a carrot cake flavor! You could also add raisins to the batter if you like your carrot cake studded with dried fruit. They add sweetness and a nice texture.

How to Store Leftover Cookies

These cookies are best the day they’re baked but they’ll last up to 3 days in an airtight container. You can also store baked cookies in the freezer for up to 1 month. To freeze cookie dough, scoop it into individual cookies, then freeze. Store in a freezer-safe bag.
