cake mix banana bread ingredients

Ingredients

  • Yellow Cake Mix– You need an 18oz box of cake mix. I used Betty Crocker’s Yellow Cake Mix but you can use any brand. Just make sure it’s an 18oz box that makes a standard 9×13 cake.
  • Oil– You’ll need a little oil or melted butter. I used vegetable oil but any neutral oil such as avocado oil or canola oil will be fine.
  • Eggs– You’ll need 2 eggs to help bind the bread and add moisture.
  • Bananas– You’ll need 1 1/4 cup of mashed bananas, about 3 small bananas or 2 large bananas. Be sure the bananas are very ripe. They should be mostly brown.

Equipment

You’ll need a 9×5 inch loaf pan. If you’re using a larger or smaller pan, you’ll need to adjust the baking time. You could also divide this up into muffins if you wanted to make banana bread muffins. But keep in mind you’ll need to adjust the bake time.

I also recommend using non-stick spray so your bread doesn’t stick to the pan. Even with a non-stick pan, I like to spray the bottom and sides with olive oil to ensure I don’t have any trouble getting the bread out of the pan.

How to Make Banana Bread with Cake Mix

Tips & Tricks

  • I like to use an oven thermometer to make sure my oven stays at the correct temperature. This can be really handy when baking.
  • Using overripe bananas will give you the best flavor in this quick bread recipe.
  • You can sprinkle a little brown sugar on top if you want a sweet crust.
  • Let the banana bread cool completely for easier slicing.
  • Bake on the center rack in the oven to ensure the bread bakes evenly. Insert a toothpick in the center when the baking time is complete. The toothpick should come out clean.
  • Store leftover banana bread wrapped tightly in plastic wrap at room temperature for up to 3 days. You could also freeze the bread for later. I recommend slicing it and then storing it in an airtight container in the freezer. The best way to enjoy it is ti microwave a since for 10 seconds increments until thawed.

Mix-Ins and Variations

This cake mix banana bread is also a great base to add your favorite mix-ins. I love adding chocolate chips or walnuts. You could also try toffee pieces, or add a peanut butter frosting. You can even make chocolate banana bread by using devil’s food cake mix instead of yellow cake. Or you can use spice cake mix for a different flavor variation.
