Ingredients
- Yellow Cake Mix– You need an 18oz box of cake mix. I used Betty Crocker’s Yellow Cake Mix but you can use any brand. Just make sure it’s an 18oz box that makes a standard 9×13 cake.
- Oil– You’ll need a little oil or melted butter. I used vegetable oil but any neutral oil such as avocado oil or canola oil will be fine.
- Eggs– You’ll need 2 eggs to help bind the bread and add moisture.
- Bananas– You’ll need 1 1/4 cup of mashed bananas, about 3 small bananas or 2 large bananas. Be sure the bananas are very ripe. They should be mostly brown.
Equipment
You’ll need a 9×5 inch loaf pan. If you’re using a larger or smaller pan, you’ll need to adjust the baking time. You could also divide this up into muffins if you wanted to make banana bread muffins. But keep in mind you’ll need to adjust the bake time.
