Faster than Fast Food
When you know it is going to be one of those days you are stuck at the office late, will be starving by the time you get home, definitely won’t take the time and energy to cook, and will inevitably end up at a drive through, plan ahead and make this instead.
It may not be faster in actual cooking time than fast food, but you will be able to sit down at your table and have this on your plate after work faster than it would take to wait in a Chick-Fil-A drive through at dinner time (because we know those lines are ridiculous). And this is both cheaper and more nutritious.
Simple & Healthy
When looking for an easy recipe to get you started eating healthier, this main course is almost as simple as it gets. It only requires two ingredients, and essentially zero prep! As long as you have a few minutes in the morning or early afternoon to throw a couple things in a crock pot, you will be good to go by dinner time!
All it requires is a few chicken breasts and some buffalo sauce. In our house we like this recipe with Frank’s buffalo sauce. Frank’s is mild and delivers a good kick without burning anyone’s taste buds. Depending on your appetite for spice, you can substitute in your favorite sauce. If you are scared of spicy foods, try to be open minded. Spice is great for the metabolism! I used to avoid anything spicy, no questions asked. Then I somehow got convinced to try Cholula hot sauce and loved it. Now I have slowly but surely started loving spicier foods.
So just in case you are in for that busy day, I won’t keep you waiting any longer, here is the recipe and you will be amazed by how truly simple it is:
Crock Pot Buffalo Chicken
Ingredients
- 3 medium chicken breasts
- 1 (12oz) bottle of Frank’s buffalo sauce (or sauce of your choosing)
Instructions
- Place chicken breasts in bottom of the crock pot
- Pour entire bottle of buffalo sauce over chicken
- Cook on low for 4 hours*
- Shred chicken halfway through (if desired) or at end of cooking, and mix with sauce.
- Serve!
*I wanted to note, I know most recipes in crock pots are 4 hours at high, or 8 at low, but I really did intentionally write 4 on low for this recipe. We have tried this at all of the aforementioned temperatures and cooking times, and realized the chicken is SO tender when cooked according to these suggested instructions. And it has always been fully cooked for us. But always check to make sure chicken isn’t pink before serving.
What To Accompany This With
I personally eat this by itself in a bowl with whatever side dish I am craving at the time. Choosing a pre-made or non-cook side dish allows you avoid any additional prep time to this meal. And eating the chicken solo means I am not getting any extra calories or fat (the hot sauce only has 5 calories per tablespoon and zero grams of fat!)
You can also make this into a delicious buffalo chicken sandwich by putting it on hamburger buns, and adding some ranch or blue cheese dressing . We have also served as an appetizer by putting the chicken on baked tortilla chips, sprinkling a little cheddar cheese on top, popping in the oven for about five minutes, and serving as individual portions of buffalo chicken dip.
