Christmas season is in the air!  Neil and I decorated our tree last night while listening to holiday music and drinking some of my healthy three ingredient dairy free hot chocolate and it gave me allllll the holiday feels.  And thanks to my sister leaving some brie from the night before we also munched on these guys the entire time.  I LOVE how easy this recipe is – literally all I did was take that brie, get some cranberry sauce and some pre baked phyllo crusts – and that was it!  A few minutes in the oven and youve got yourself the most festive, tastiest, and actually pretty elegant looking/sounding appetizer!  What more could you ask for.  We host Christmas dinner every year for both of our families and you better believe this is going to be on the menu.

If you are looking for dishes to pair this with to bring together the ultimate Christmas dinner yourself, I suggest starting with my massaged kale salad, definitely include my butternut squash soup (made with a secret fun ingredient), use my italian style baked zoodles for your main dish, and finish off with my avocado pillow cookies or my sweet potato pie.

Let’s Make Some 3 Ingredient Brie & Cranberry Tarts!

I say this a lot on here but I mean it when I say these could NOT be easier.  You really just have to buy three things and assemble.  Now if you wanted to be a little healthier and get a little more of that “from scratch” feeling you could always use your favorite homemade cranberry sauce and pastry crust recipe instead of store bought – but I went the quick route this time so that is what you will see here!

So for my crusts I used pre baked phyllo shells.  I found them in the frozen section of my Publix.  All you have to do is take them out of the box and they are ready to go.  I bake them for a few minutes before baking them with the filling just to ensure they get crispy, but you could honestly probably even skip that step if you wanted to.  The box I got came with 15 shells so that is how many tarts I made.

Then I had a triangle wedge of brie.  Just the normal kind you get from the store.  And honestly I had some left over after this – I didn’t even use it all!  So don’t feel like you have to get more than that unless you are doubling the recipe.

Lastly – the cranberry sauce!  Again, I just bought pre-made sauce.  Just check your ingredients on the can because some have better ingredients than others.  I meant to buy whole cranberry sauce to make this a little more visually appealing, but ended up with the jelly kind (don’t ask how).  It worked just as well and was just as delicious so you can choose what you want!

Then all you have to do is cook these – for less than ten minutes – and serve!  All you need is enough time for the cheese to melt.  I definitely recommend serving these fresh because you want the melty cheese.  If you are making ahead of time, just assemble and keep in the fridge and pop them in the oven when you are ready to go.

In addition to the listed ingredients you will need:

  • a cookie sheet
  • a knife for the brie
  • a spoon for the sauce

3 Ingredient brie and cranberry tarts are so easy and quick to make, but look gourmet and taste incredible.  They will be the first thing gone off the holiday party table!


Ingredients

Scale
  • 1 wedge of brie
  • 1 package (15 count) baked phyllo shells
  • about 4 tablespoons cranberry sauce

Instructions

  1. Preheat the oven to 350F, remove the phyllo shells from their package, place on a cookie sheet, pre-bake for 3 minutes, and remove from the oven.
  2. Cut your brie into small squares that will fit in the shells, place one inside each shell.
  3. Drop a dollop of cranberry sauce into each shell.
  4. Bake for an additional 8 minutes, serve immediately.

Notes

Gluten free if you purchase a gluten free pastry crust

Refined sugar free if you use a sugar free sauce

The amount of cranberry sauce really depends on how much you put in each shell.  I bought a jar of cranberry sauce and had a lot left over so if you do that you will have plenty, but this could also be a great way to use up some leftovers because it doesn’t require a lot at all!

I also didn’t even use my whole wedge of brie to make these so don’t worry about running out of that if you only buy one triangle!
