The Secret to the Perfect Banana Nut Muffin
Somehow muffins seem to be really hard to get right – am I alone in that? Maybe it is just me. But if you agree, here is one of the best tips I have learned – do not over stir. Can it really be that easy? Yep! Over stirring your ingredients make the muffins denser, and we all want that fluffiness when we bite into one! So don’t worry about getting every last lump out.
Also be careful with flours – they are not all created equal. Coconut flour in particular tends to make very dense baked goods if you don’t make other tweaks to the recipe. So stick to the recommendations I give below if you want yours to look like mine! If you really want to make these with coconut flour – feel free to message me and ask how!

Other than that this recipe is pretty straightforward. We take advantage of the sweetness in our bananas (the riper the sweeter!) and add a little maple syrup for good measure. You could always make it without a sweetener at all if that is more your jam! These will still have a nice hint of sweetness without it. Especially if you make it with the gluten free all purpose flour (whole wheat flour tends to have a more distinctive taste in my opinion)
Then the only question becomes what nut butter to slather all of them! I recommend pecan 😉

These muffins combine the nutty flavor of walnuts, the sweetness of bananas, and the fluffiness of your favorite pastry all into the perfect breakfast to get your day started the right way.
Ingredients
- 2 large ripe bananas
- 1/3 cup unsweetened apple sauce
- 1 egg*
- 1 tsp vanilla
- 2 tbsp maple syrup
- 1.5 cup whole wheat flour**
- dash of salt
- 1/4 tsp nutmeg
- 1 tsp cinnamon
- 3/4 cup walnuts (plus a little more for topping)
Instructions
- Preheat oven to 375F.
- In a large mixing bowl, mash your bananas, leaving a few lumps
- Add the rest of the wet ingredients (through maple syrup above) and stir until combined.
- Add all dry ingredients except walnuts and mix.
- Fold in walnuts, then pour batter into a greased (or lined) muffin pan. This made exactly 12 regular sized muffins for me.
- Optional: Top with additional walnuts
- Bake for 18 minutes until muffins spring back to the touch.
Notes
*Vegan option: swap egg out with a flax egg (1 tbsp ground flax mixed with 3 tbsp water) *note I have not tried this on this recipe yet.
**Gluten free option: swap whole wheat flour on a 1:1 ratio with gluten free all purpose flour
