Banana Bread Baked Oatmeal is the perfect breakfast to prep for busy days on the go when you still want something satisfying that will energize your day. It is soft and moist, sweetened with real fruit and no refined sugar, and is gluten free and vegan.
We all know that we can make a great banana bread when we have those overripe bananas in our kitchen, but sometimes maybe we want something a little lighter, a little less involved, or just something a little different (because I don’t know about you but otherwise we’d be living off banana bread in our house- Neil loves buying bananas and then forgetting to bring them to work). BUT – we want it to be just as tasty of course!
That is where this delicious baked oatmeal comes in to play. It tastes just like your favorite banana bread, is the PERFECT breakfast meal prep to keep around all week long to bring on the go(or even freeze!), and is super easy to make! Oh and did I mention, it is gluten free, dairy free, and vegan. I call that a win-win-WIN. It is perfect for the whole family regardless of most dietary restrictions!

Let’s Make Banana Bread Baked Oatmeal!
This recipe is super easy, just mix everything together, dump it in a pan and bake! You can tell in my photos I used a larger pan that I had. But you can make this with any 8×8 or 9×9 pan that you have. If you use a smaller pan it will just increase the bake time. But start with 30 minutes and then check it. you will know when it is done because the oatmeal will be firm, bounce back when you touch it, and the edges will be golden brown.
Of course if you don’t have certain dietary restrictions in your house and don’t have certain ingredients listed below you can use regular oats versus gluten free, a real egg, and cow’s milk, and your oatmeal will be just as great! I just like to make my recipes as diet-friendly as possible 🙂 don’t want anyone to feel left out because of something they can’t eat!

Banana Bread Baked Oatmeal is the perfect breakfast to prep for busy days on the go when you still want something satisfying that will energize your day. It is soft and moist, sweetened with real fruit and no refined sugar, and is gluten free and vegan.
Ingredients
- 2 cups gluten free rolled oats
- 2 overripe bananas
- 1/3 cup sliced almonds
- 1 vegan egg (instead of making my own like I usually do, this time I tried this one)
- if you do make your own, just mix 1 tbsp ground flax with 3 tbsp water and let thicken
- 1.5 cup cashew milk
- 1/2 cup unsweetened apple sauce
- 1.5 tsp cinnamon
- 1/8 tsp nutmeg
- 1/2 tsp himilayan salt
- 1 tsp baking powder
Instructions
- Preheat oven to 375F.
- Combine dry ingredients in a large bowl (oats, almonds, cinnamon, nutmeg, salt, baking powder).
- Add wet ingredients to dry (bananas, egg, milk, apple sauce).
- Mix until well combined.
- Pour batter in baking sheet (I used a larger one because I like mine thinner, but you can use an 8×8 or 9×9 – will vary cooking time slightly).
- Cook for 30 minutes. If using a smaller pan, plan to increase this time. You will know it is done once it is firm, bounces to your touch, and the edges start to turn golden brown.
Notes
Feel free to add in your favorite toppings! I recommend chocolate chips. Just be sure to use ones that are compliant with any dietary restrictions! You can check out my Amazon shop for my favorite brands that are dairy free and/or sugar free.
