Bailey’s Brownies

Bailey’s Irish Cream and a good fudgy brownie are two parts of my food love language.  Throw them together and it’s a whole other ball game.  These Bailey’s brownies are thick and fudgy and chocolatey and liquor is optional (but encouraged).

Ahhhh Baileys.  One of my favorite things to come from my Irish heritage! I love pouring Bailey’s in a hot cup of cofee when I am on vacation or just making a weekend extra fun, and now I have realized how fun it is to bake with it too!  In these brownies I just swapped out traditional milk for some creamy Bailey’s to give these brownies some of that Irish cream flavor.  They are perfectly fudgy and super delicious!

Let’s Make Some Bailey’s Brownies!

So you can make these REALLY Bailey’s, a little Baileys, or even nix the Bailey’s and just have a really good brownie.  I used actual Bailey’s in the brownie batter and also Bailey’s chocolate chips.  But if you don’t want to use the actual liquor you can sub that for milk and just use the chocolate chips!  I found the chocolate chips at my Publix but you can also get them on Amazon.

And YES these are friendly to all ages!  Remember, baking with alcohol will bake out the alcohol content.  If you drink while you bake, that is only for 21+ 😉

These are a chickpea based brownie because I love how fudgy chickpeas make them and also ups their fiber and protein content.  I used a mix of those and whole wheat flour, but if you are looking for a gluten free option I recommend using gluten free all purpose and you can swap one for one.

Definitely don’t skip melting some chocolate chips and including them in the batter – that also helps make these super fudgy and extra delicious!

In addition to this listed ingredients, you will need:

  • a food processor
  • a microwave safe bowl
  • parchment paper
  • an 8×8 baking dish
  • a toothpick to test

Gluten Free Option

Bailey’s Irish Cream and a good fudgy brownie are two parts of my food love language.  Throw them together and it’s a whole other ball game.  These Bailey’s brownies are thick and fudgy and chocolatey and liquor is optional (but encouraged).


Ingredients

Scale
  • 1 15.5oz can of chickpeas
  • 1/3 cup whole wheat flour
  • 1/2 cup of Bailey’s (or milk)
  • 1/4 cup agave
  • 2 tbsp nut butter
  • 1/3 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp apple cider vinegar
  • 1/2 cup Bailey’s chocolate chips (+ more for topping)

Instructions

  1. Preheat oven to 375F.
  2. Drain and rinse your chickpeas, and then combine everything together in the food processor, except the chocolate chips, and blend until smooth.
  3. While that is blending, melt your chocolate chips in the microwave on low heat in 30 second intervals (so you don’t burn it).  Once it is melted, slowly incorporate into the other ingredients in the food processor and keep blending until combined.
  4. Pour in an 8×8 baking pan lined with parchment paper, top with more chocolate chips, and bake for 15 minutes or until firm to the touch and a toothpick comes out mostly clean.

Notes

You can substitute whole wheat flour for gluten free all purpose for a gluten free option

If you don’t have Bailey’s or the Bailey’s chocolate chips you can sub for dairy free milk and dark chocolate chips and still have a really delicious chocolate brownie! (and if you use non dairy milk and sugar free/dairy free chocolate chips that will also make this recipe vegan and refined sugar free)
