Avocado pillows are what dreams are made of am I right??

If you aren’t sure, you will be after trying this recipe.  I wasn’t exaggerating when I decided to call these pillow cookies – these fluffy guys truly live up to their name.  But not only are they delicious, they’re dairy free, vegan, and refined sugar free (depending on what chocolate chips you decide to add).

This was my first time baking with avocados and I am so sad that it took me this long!  I love the consistency it adds to the cookies.  Plus it loads them with healthy fats and dietary fiber!  The only thing better than a delicious cookie is a delicious cookie that is actually good for you too!

Let’s Make Some Avocado Cookies!

The hardest part about these cookies is finding a ripe avocado in the store!  Can be so difficult sometimes right?  But after that it will be smooth sailing.  Here are some swaps and suggestions for you though:

If you don’t have, or can’t eat, apple sauce, swap this for oil!  I’d recommend coconut oil personally.  Oil is what I am replacing in my baked goods when I use apple sauce but if you’d prefer the oil it is an easy one to one swap.  You could also use plain greek yogurt if you are not dairy free!

If you are looking for a gluten free option I’d recommend Bob’s Red Mill gluten free all purpose flour, or their almond flour.  I love their products, they are high quality and always make for delicious treats!  However I have only made this using the whole wheat flour so I can’t say exactly how they will turn out – but it is always worth a shot and I’d love to hear how it goes if you try it!

And of course if you want a nut free option, just swap the cashew milk for oat milk!

I like making my cookies small (that way I can eat more of them 😛 ) so if you tend to bake larger cookies just plan to adjust the baking time a little bit.  Otherwise the instructions are pretty straightforward and if you start now you can be in avocado cookie dreamland in just about 20 minutes!  Enjoy!

Description

Vegan, Refined Sugar Free

Avocado cookies are light and fluffy, super soft, and bursting with gooey chocolate chips.  Made healthier using whole wheat and coconut flour, avocado, and natural sweeteners.


Ingredients

Scale
  • 1 ripe avocado
  • 3/4 cup whole wheat flour (I buy this brand)
  • 2 tbsp coconut flour
  • 1/3 cup + 1 tbsp cocoa powder
  • 1 tbsp ground flax seeds
  • 1 tsp baking powder
  • 1/3 cup unsweetened apple sauce
  • 1/2 cup + 2 tbsp cashew milk
  • 2 or 3 tbsp agave 
  • Dairy free chocolate chips (I used this brand)

Instructions

  1. Preheat oven to 350F.
  2. Mash avocado in a small bowl, set aside.
  3. In a large mixing bowl, combine all dry ingredients (whole wheat flour, coconut flour, cocoa powder, flax seeds, baking powder), mix well.
  4. Add all wet ingredients, including avocado, and mix until dough forms.
  5. Fold in chocolate chips.
  6. Using a cookie scooper (or about 1 tbsp each) form cookies on a cookie sheet lined with parchment paper.
  7. flatten cookies just a little with your finger or back of a spoon.
  8. Add more chocolate chips on top!
  9. Bake for 10-12 minutes (I did my first batch for 10 and they were extra gooey – those were my fave).

Notes

Must use dairy free chocolate chips to keep this recipe dairy free.  Check out my Amazon shop to see the ones I use!
