Gluten Free, Dairy Free/Vegan Options
We are ready for fiesta night! This avocado crema is the perfect cool and creamy addition to these salsa chicken tacos. And together they make the perfect meal!
Ingredients
Avocado Crema:
- 1 avocado
- juice from 1/2 of a lime
- 3 tbsp greek yogurt
- 1/4 tsp apple cider vinegar
- 2 tbsp cashew milk
- 1/2 tsp cilantro
- 1/4 tsp salt
Salsa Chicken Tacos:
- 2 large chicken breasts
- 1 jar medium salsa
- 1/2 red onion
- 1 tsp salt
- 2 tbsp red wine vinegar
- Arugula
- Tortillas
Instructions
Avocado Crema:
- In a mixing bowl, mash the avocado really well until no lumps remain.
- Combine all ingredients and whisk until smooth.
- Add more milk if you want it thinner.
Salsa Chicken Tacos:
- Chicken:
- Put chicken and salsa in your crockpot and cook on high for three hours (or low for six). Then shred chicken, stir well into salsa and let cook about 30 more minutes.
- Pickled onions:
- Slice onion, and put it in a mason jar with the salt and red wine vinegar.
- For the first twenty minutes, shake every few minutes to evenly coat onion.
- Let sit in fridge overnight.
- Tortillas:
- Spray a skillet with a little avocado oil and cook each side of tortilla until it is brown and toasty.
- Assembling tacos:
- On top of your tortilla, place chicken, then onions, add some arugula, and drizzle crema on top!
Notes
Dairy Free Option – use non-dairy plain yogurt instead of greek yogurt to make this crema dairy free. The tacos are dairy free if you make the crema dairy free.
Vegan Option – the crema is vegan if made with non dairy yogurt. The tacos contain chicken and therefore are still not vegan.
Gluten Free Option – use a gluten free tortilla and these tacos will be gluten free.
