Avocado Brownies

These brownies are gluten free, dairy free, refined sugar free, and made with AVOCADOS.  The avocado makes these so soft and fudgy while not weighing them down. The perfect guiltless treat!

I love a good brownie, that is why you will find various variations throughout the blog like my zucchini brownies or my CBD brownies and of course can’t forget my celery pulp brownies.  If you haven’t noticed I also like adding veggies to them 😛

But here I actually added a fruit!  Did you know avocados are fruit – not a vegetable? It’s true, even though they are savory.  And avocados are so good for us.  We all know that they are full of healthy fats, but did you also know that an average avocado has 13 grams of fiber too?? That is over half of the daily recommended value!

I have been LOVING using avocados in recipes lately.  I am not going to lie it took me a while to come around to them but now I love adding them to my smoothies, making avocado chips, my pillow cookies, my triple chocolate avocado zucchini bread, and now these!

In addition to the avocados  I also swapped out the oil for apple sauce.  It is one of my favorite swaps to make in baking because it makes baked goods a little lighter, plus it adds some sweetness without any added sugar! (always buy unsweetened apple sauce, or even make your own!)

This is also a healthier option because I used gluten free all purpose flour (which is basically a mix of different types of flour that don’t contain gluten – like tapioca, garbanzo bean, fava bean etc.) and coconut flour.  Beyond just taking gluten out of the equation, these are less refined and contain more nutrients than white and even whole wheat flours.

Description

Gluten Free, Dairy Free, Refined Sugar Free

These brownies are gluten free, dairy free, refined sugar free, and made with AVOCADOS.  The avocado makes these so soft and fudgy while not weighing them down. The perfect guiltless treat!


Ingredients

Scale
  • 1 ripe avocado
  • 2 eggs
  • 1/2 cup unsweetend apple sauce
  • 1/2 cup cocoa powder
  • 1/4 cup gluten free all purpose flour
  • 1/4 cup coconut flour
  • 1 tsp baking soda
  • 1 tbsp organic Stevia
  • dash of salt
  • Dairy free chocolate Chips
  • Nut butter

Instructions

  1. Preheat oven to 350F.
  2. In a large bowl, mash avocado using a fork until no lumps remain.
  3. Add eggs, and apple sauce to avocado and mix until well combined.
  4. In a separate bowl, combine cocoa powder, both flours, baking soda, Stevia, and salt and stir together.
  5. Add dry ingredients to wet, mix until combined.
  6. Fold in chocolate chips.
  7. Pour batter into an 8×8 baking dish lined with parchment paper (for easy removal).
  8. Drizzle lines of nut butter on top, creating any pattern you like, and sprinkle with mini chocolate chips (optional)
  9. Bake for 23 minutes, until a toothpick comes out clean.

I like using Lily’s Sweets dark chocolate chips – they are dairy and refined sugar free
