Baking with zucchini is one of my favorite things to do. It makes your baked goods SO moist (sorry if you don’t like that word but it is true!) and it also sneaks in some great veggie action in there to provide extra nutrients and crowd out some flour that we can use less of because this helps give them structure. Here I also used collagen peptides in order to add some extra protein to these cookies. I love making my baked goods healthier and between the veggies and the collagen you can basically have these for breakfast! Let’s Make Some Apple Spice Zucchini Collagen Cookies!
You are going to start by grating your zucchini. You want a cup, and that took me just about an entire medium sized zuke. I personally like to use the smallest grater I have for this recipe because that helps the zucchini blend in so you don’t have big chunks.
I have made this recipe using whole wheat flour and gluten free all purpose so feel free to use either depending on your dietary needs!
As mentioned above, the collagen I used is Ancient Nutrition vanilla collagen. I like that it adds protein but it also adds a great flavor! If you don’t have any collagen you can leave it out, but then be sure to add a little bit of sweetener to these – I recommend a dry sweetener like coconut sugar, stevia, or cane sugar.
The last thing I want to mention is that the batter will be a little runnier than most cookie dough, but just scoop it onto your cookie sheet and I promise it will bake into a fluffy cookie 🙂 I like to warn about things like that because I know when I try other peoples’ recipes and that happens to me I get worried I am doing something wrong.

Zucchini is the secret ingredient that makes all your baked goods the perfect moist texture, and a little bit healthier! Combined with the protein from collagen peptides these apple spice collagen cookies are a perfect healthy snack that tastes like an indulgent treat.
Ingredients
- 1 cup grated zucchini (about 1 medium zucchini)
- 1/3 cup unsweetened apple sauce
- 1/2 cup gluten free oats
- 1 egg
- 1 tsp vanilla extract
- 1 cup whole wheat flour (or gluten free all purpose)
- 1 scoop vanilla collagen (I used Ancient Nutrition)
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 tsp baking soda
- 1 chocolate bar (I used a Lily’s dark chocolate) + additional chocolate chips if desired
- Optional: sweetener of choice (can add some stevia, coconut sugar, or cane sugar)
Instructions
- Preheat oven to 375F.
- Grate your zucchini. The smaller grater the better. (no need to pat dry).
- Combine your apple sauce, egg, and vanilla in the bowl with your zucchini.
- In another bowl, combine your flour, collagen, spices, sweetener if adding, and baking soda.
- Add your dry ingredients into your wet, and then add in oats.
- Crush your chocolate bar into small pieces, and fold into batter (can also add extra chocolate chips if you want more chocolate 🙂 )
- Using a cookie scooper, scoop batter onto a large cookie sheet lined with parchment paper (I made 24 cookies)
- Bake for 15-17 minutes until edges are golden brown.
Notes
I think these are great without any sweetener but if you want a sweeter cookie you can add some!
If using gluten free all purpose flour you can do a 1 for 1 swap.
