Zucchini is the secret ingredient that makes all your baked goods the perfect moist texture, and a little bit healthier! Combined with the protein from collagen peptides these apple spice collagen cookies are a perfect healthy snack that tastes like an indulgent treat.
Baking with zucchini is one of my favorite things to do. It makes your baked goods SO moist (sorry if you don’t like that word but it is true!) and it also sneaks in some great veggie action in there to provide extra nutrients and crowd out some flour that we can use less of because this helps give them structure. Here I also used collagen peptides in order to add some extra protein to these cookies. Let’s Make Some Apple Spice Zucchini Collagen Cookies!
You are going to start by grating your zucchini. You want a cup, and that took me just about an entire medium sized zuke. I personally like to use the smallest grater I have for this recipe because that helps the zucchini blend in so you don’t have big chunks.
I have made this recipe using whole wheat flour and gluten free all purpose so feel free to use either depending on your dietary needs!
As mentioned above, the collagen I used is Ancient Nutrition vanilla collagen. I like that it adds protein but it also adds a great flavor! If you don’t have any collagen you can leave it out, but then be sure to add a little bit of sweetener to these – I recommend a dry sweetener like coconut sugar, stevia, or cane sugar.
The last thing I want to mention is that the batter will be a little runnier than most cookie dough, but just scoop it onto your cookie sheet and I promise it will bake into a fluffy cookie 🙂 I like to warn about things like that because I know when I try other peoples’ recipes and that happens to me I get worried I am doing something wrong.
