- 1lb Yukon gold potatoes
- 1 tablespoon olive oil
- Salt to taste
Instructions
- Peel the potatoes and rinse them under cold water. Pat them dry with a kitchen towel.
- Slice the potatoes into 1/2″ thick slices.
- Place the potatoes on the cutting board with a chopstick on each side. Slice partway down the potato, letting the chopstick stop the knife from going all the way through the potato.
- Flip the potato and cut the other side diagonally, letting the chopstick stop the knife from going all the way through the potato.
- Toss the potatoes with olive oil and salt.
- Preheat the air fryer to 350 degrees.
- Spread the potatoes in a single layer in the air fryer basket. You will need to cook them in multiple batches.
- Air fry for 20-25 minutes until golden brown on each side flipping once halfway through cooking.
